Aberdeenshire’s first rum distillery Dark Matter Distillers launches white expression of their popular spirit

An Aberdeenshire spirit distiller is stepping into a new sub-category as it launches its first white rum.

Dark Matter Distillers in Banchory has created a small batch of the experimental spirit, with just 995 bottles of it available.

The rum firm is known for its award-winning, signature spiced rum and flavoured rum liqueurs, and their first white collectable has been bottled at 43.5% ABV.

Venturing into new territory, Dark Matter’s white rum prototype has been made from single estate sugar cane juice from Barbados, pressed using an ancient steam mill on the island. It was then carefully fermented and distilled by Dark Matter at its distillery on Burn O’Bennie Road.

Bottles numbered 10 to 995 are available on Dark Matter’s online shop from today, however bottles one to nine will be auctioned off at a future date.

The first bottle of its inaugural dark cask rum counterpart reached £13,000 at auction last year.

The prototype rum has been resting in stainless steel tanks for six years since it was first distilled in 2016.

Jim Ewen, managing director of Dark Matter Distillers, said: “It captures all the distinctive flavour characteristics of the Barbados single estate sugar cane.

“We decided that now is the right time to release it. The bottles are limited and numbered, meaning that not only is this an exceptional spirit, it’s a collectors item too. We’re expecting bottles 10 to 995 to be snapped up quickly.

“We had amazing success with our inaugural cask rum release in 2021, the ‘Physicist Series’. Nine, individually labelled bottles, each representing a scientist, were drawn from the distillery’s first ever cask and sold at auction. Bottle one, or ‘Einstein’, was sold for a staggering £13,000.

“We’re expecting to have similar interest from collectors with our new innovation being an extension to the ‘Physicist Series’ concept.”

Already award-winning

The liquid was entered into the Spirits Business Rum & Cahaça Masters competition in 2017, where it won a Gold Medal in the ultra-premium category.

Dark Matter Distillers launched Scotland’s first rum distillery in 2015. The team are singularly focused on the spirit, with an emphasis on fermentation using the highest quality base ingredients.

The white rum is available in 70cl bottles for £55 per bottle from the Dark Matter Distillers website.
