Kids’ Kitchen: Mug cakes – the quirky new way to enjoy baking

Mug cakes are wonderful treats for a busy family – they can be made in just a few minutes; they’re easy to make and great fun to eat, so no wonder everybody loves them.

The two child-friendly recipes below are made with Chiquita bananas which are loaded with fibre, important vitamins and minerals.

There’s very little preparation involved to make these sweet treats which have been made using a 600-700 watt microwave.

Depending on the power of your microwave, you may need to slightly adjust the timings.

Chiquita banana mug brownie

Ingredients – serves two

  • 2 ripe bananas
  • 2tbsp almond milk or other (plant) milk
  • 2tbsp maple syrup
  • 4tbsp cacao powder
  • 1tsp baking powder
  • 4tbsp dark chocolate chips

The method

  • Get two microwave-safe mugs and rub the inside of them with either melted butter or cooking spray.
  • Mash the bananas with a fork in a bowl.
  • Add the almond milk and maple syrup and mix.
  • Add in the cacao powder and baking powder, mix well.
  • Spoon the batter into the mugs.
  • Cook in the microwave for up to 3 minutes and check if it cooked through every 90 seconds.
  • Meanwhile, melt the chocolate chips (best done in a bowl with the base over, but not touching, hot water). Add a spoon of melted chocolate to the pud and enjoy!
Chiquita banana bread mug cake

Ingredients – serves two

1½ ripe bananas

4tbsp wheat flour

3tbsp brown sugar

1 egg

1tbsp vegetable oil

½tsp baking soda

¼tsp baking powder

DIRECTIONS

Generously spray two microwave-safe mugs with cooking spray or lightly coat with melted butter.

Using a fork, mash 1 banana in a bowl.

Mix the egg, baking soda and powder, sugar, vegetable oil and flour with the mashed banana.

Spoon the batter into the mugs.

Pop into the microwave for up to 2 minutes – check after 60 seconds.

Cut the half banana into slices and pop on top of the finished bread.
