Then all you have to do is pop them in the oven, while the turkey is resting. The day before, peel and chop the potatoes to your preferred size. Boil them in plenty of salted water for 7 mins. Drain, and give a really good shake to fluff them up. Tip into a bowl, and pour over the melted duck or goose fat. Refrigerate. Heat the oven to 200C. Place the prepared potatoes onto a flat baking tray and put in the oven for 30 mins. Check them after 20 mins and turn over. Cook for a further 10-20 minutes until really crisp.
