Those getting into the Halloween spirit are being urged not to let their pumpkins go to waste.
Every year, more than 22 million pumpkins are left uneaten in the UK, much of which ends up in landfill according to environmental campaign group Hubbub.
This works out at over £32 million worth of edible food being thrown away.
For those yet to carve their pumpkins for guisers tonight, there are lots of ways to save the fruit.
John Sergison from Aberdeen community group, Earth & Worms, said pumpkins can used in lots of different ways.
Speaking on BBC’s Good Morning Scotland, he said: “Any of the seeds you can roast them, you add whatever spices you want.
“You can make them sweet or savoury and it saves them from going into the bin as food waste.
“You can also when you’re carving it up, keep hold of the chunks and put them into soups, bake them into pies – any sort of dishes that you think is quite nice for this season.”
‘Don’t just decorate it – devour it’
Mr Sergison is not the only one suggesting alternatives.
Aberdeenshire Council has also been asking residents to put their leftovers in food caddys or at the kerbside to help reduce waste and save money.
Publishing handy recipes on social media, Recycling and Waste Aberdeenshire has been offering inspiring alternatives for leftovers.
Recipes for soup, cupcakes and roasted pumpkin seeds have been suggested over the last few weeks.
Publishing a few posts online, they stated: “Resurrect the pumpkin’s true purpose this Halloween, and don’t just decorate it—devour it.
“If you don’t end making something delicious from your pumpkin—and if it won’t fit chopped up in your food waste, you can leave it whole and on top of your food caddy for pickup.
“We only ask that you remove any decorations such as metal or plastic accessories.”
